The saltier varieties, usually harder as well, are known as kefalograviera and used mainly grated on pasta. All of the varieties are used in cooking, but graviera’s place of honor is alone at the table. A fresh graviera goes better with robust whites with balanced acidity, while the mature, tangier varieties pair beautifully with full-bodied reds. Robola is ideal with its discreet fruity tones, but so is a Vidiano or even a modern retsina paired with a hard, savory graviera.
Greece’s tangiest and curmudgeonly cheese is made in the Cycladic islands using either cow milk or a mixture of sheep’s and goat’s. It is pallet-numbingly spicy, yellow and creamy, similar to blue cheese. It is eaten only as a table cheese and goes well with sweet tomatoes, which help mellow its aggressive flavor. Few wines can stand up to it, but sweetness is a must. Sweet and even fortified wines can make a perfect partner. A Samos vin de liqueur from the local Muscat variety would be an excellent choice.
A global emblem of Greece, feta is made of sheep milk and aged in brine, in wooden barrels or tins. Depending on where it’s produced, it comes in an array of distinctive flavors and textures, from soft to almost cream-like, and from hard and tangy, to crumbly and salty. Whatever its profile, it is a capricious cheese that doesn’t like to have its thunder stolen by wine. The best way to enjoy a good feta is as a snack, dressed in fresh virgin olive oil and a sprinkling of fresh oregano. It is perfect in traditional Greek salad, pies and on the side of oil-rich vegetable casseroles. Τhe characteristic salty and somewhat tart sharp flavor of feta pairs with a fresh, fragrant white wine with balanced acidity like Moschofilero, in keeping with one of the basic tenets: combining savory with sharp.

Kathimerini: The Hellenic Olympic Committee presented on Tuesday the details of the Lighting and Handover Ceremonies of the Olympic Flame for Rio 2016, stressing that on this anniversary of 80 years since the first lighting of the Olympic Flame in 1936 as many Greeks as possible ought to honor it with their presence and participation in the torch relay and the Handover Ceremony.
The Olympic Flame for the Rio Games will be lit at Ancient Olympia on April 21. After a six-day relay around Greece it will be handed over to the Organizing Committee of the Rio Games on April 27 at the Panathenaic Stadium of Athens.
In the presentation that took place at the stadium, an Olympic symbol, the President of the Hellenic Olympic Committee Spyros Kapralos said that “besides the timeless significance this Flame Lighting has for our country, it coincides with the 80-year anniversary since the first time the Flame was lit at the sacred land of Ancient Olympia, to light up the Modern Olympic Games.
“The shine of the Olympic Flame also contains some of the shine of Greece,” he said, adding that “the Lighting of the Flame links the ancient and modern civilizations and presents to every generation the ideals and values that were born in Ancient Greece and then travelled across the whole world, giving physical substance to the meanings of culture and peace.”
Kapralos also stated that the HOC, in association with the United Nations and the International Olympic Committee, has already selected the person who will represent refugees in the Olympic Torch Relay at Elaionas, western Athens. He said that although he cannot release the name, the participant will be a Syrian refugee who has claimed asylum in Greece.
The two ceremonies will feature dancers wearing outfits featuring a novel but also classical design courtesy of British-born Greek Cypriot Eleni Kyriacou. They will be choreographed by Artemis Ignatiou. Katerina Lechou will again be the High Priestess who lights the cauldron. Fotis Kaymenakis will act as the coordinator and director of both ceremonies.
Greek pop music superstar Sakis Rouvas will headline the Handover Ceremony, as he leads the Ellada Boris (i.e. “Greece You Can”) campaign to assist the Greek Olympic squad. The singer called on Greeks to deliver “a message of peace, noble competition, passion, optimism and pride.”

Greece Is: Archaeologists have revealed that the area of the Faliron Delta, 7.8 k south-west of the Athens center, is home to the largest cemetery of the Classical Age. A section of the site cleared in March revealed 80 skeletons – from a total of 1,500 – placed side by side in a 2.5-meter deep grave, half of them shackled. Metal handcuffs attached to many of the skeletons have led them to be known as the “captives of Faliron.”
The bodies recovered belong to well-built young men with excellent teeth and no bone fractures. The remains indicate that the men enjoyed good health until the time of death, possibly by mass execution. The skeletons were lined up, some on their backs and some on their stomachs. “The fact that half were shackled doesn’t mean all of them weren’t,” says archeologist Sevos Agouras who is involved in the excavations at the ancient cemetery. “They were all positioned with their hands behind their backs, and this indicates that they were probably bound in some way.”
Though there are some instances of shackled bodies in antiquity, such burials go against the practices of the Greek ancient world. “There are few incidents of bound captives uncovered in graves around Greece, however finding so many shackled skeletons together is unique to Faliron,” says Agouras.
One skeleton has an arrowhead stuck to its shoulder, indicating a possible capture, says lead archeologist Stella Chrysoulaki from the Ephorate of Piraeus, Western Attica, who presented the findings to the Central Archeological Council on April 13, 2016.
During her presentation of findings, Chrysoulaki said that the graves could be safely dated due to the presence of two trefoil jugs from the 7th century BC that were found nearby. This date connects the skeletons with the “Cylonian affair”, an attempted coup by Olympic champion and Athenian nobleman, Cylon, in 632 BC. The instigators of the coup were cornered and, though Cylon escaped, his followers took refuge in the temple of Athena at the Acropolis. Coaxed out of the temple with assurances that their lives would be spared if they stood trial, they were nonetheless massacred by Megacles of the powerful Alcmaeonid clan. The execution of the conspirators was condemned as sacrilegious by the city’s authorities.

Greece Is: World-famous, the stunning Athenian Trilogy – the three elegant buildings on Panepistimiou Street – stands above the scramble of one of the city center’s busiest thoroughfares. Designed in the mid-19th century by the Danish Hansen brothers and completed years later with the help of benefactors and donors, these buildings have seen it all: from the urban planning visions of King Otto and the star architects of the time, horse-drawn carriages making way to trams and later cars, to apartment build ings popping up on all sides and the evolution into a metropols of today, complete with demonstrators, official guests and distinguished academics, migrants, students, drug addicts and peddlers.
Athenians may hardly cast them a glance, but their presence is a constant, a consolation in an ever-shifting landscape.
Our tour of the neoclassical Athenian trilogy begins in the forecourt of Athens University, the first of the three buildings to be constructed, in 1864, by the Danish architect Christian Hansen and the one that gave its name to one of the busiest streets in the city center, Panepistimiou (University street). Before I go in to view the famous Great Hall of Ceremonies, the aula, I look up to marvel at the colorful murals in the portico, one of its most impressive elements. Financed by wealthy benefactors Simon Sinas and Nikolaus Dumba, the mural was designed by Austrian artist Carl Rahl and executed after his death by Polish painter Eduard Lebiedzki. At its center it depicts King Otto, the building’s primary donor, surrounded by the arts and sciences personified in classical attire. I take several steps back to appreciate the entire mural, all 45 meters of it, and the edifice’s relative simplicity, despite its neoclassical splendor, which shows Hansen’s attempt to adap t it to the Athenian landscape of the time. Athens, you see, was still a village in those days.
